- 4 cod fillets *thawed or fresh
- 1.5 tsp mild curry powder
- 2 tbsp ghee
- ½ tsp paprika
- 5 cloves garlic *minced
- ½ tsp ginger paste
- ½ tsp cayenne pepper
- ½ tsp Kosher salt
- ½ tsp black pepper
- ½ tsp chili garlic sauce
- 2 tsp lemon juice *freshly squeezed

Thaw, rinse, and pat dry cod fillets and set aside.
In a small chopper, add garlic cloves and freshly squeezed lemon juice and process.
In a large mixing bowl, place cod fillets, add the lemon/garlic mixture, ginger paste, chili garlic sauce, parsley, and spices (curry powder, black pepper, cayenne pepper, paprika, and salt), mix well. Set aside and let marinate for at least 15 minutes.
In a large skillet, melt ghee, place cod fillets and cook on medium high heat for 1 minute. Then cover skillet, turn heat to medium and cook for 4 minutes. Uncover skillet, carefully flip fillets and cook other side, uncovered for 2-3 minutes on medium heat (do not over cook), until most of the liquid evaporates. Add freshly chopped parsley, remove skillet from heat, cover and let rest for 2-3 minutes.
