In our kitchen, waffles are made for breakfast at least twice a week, sometimes even more. I am biased towards the Breville Smart Pro waffle maker as I think it is a genius invention and gives perfect results, every time. Makes those days when you are famished for breakfast but don’t want to settle for just anything, a no-brainer! These waffles can be whipped up in no time and they taste as if you spent the entire morning in the kitchen. Beyond Yummy!
Blueberry Almond Waffles
You can really do magic with a good waffle iron, waffle mix and some fresh ingredients. This is a delicious go-to breakfast for lazy Sunday mornings (or really anytime during the week). Crisp from the outside, moist on the inside, and a subtle vanilla flavor. Magical!

Ingredients
Waffles
- 3 cups Belgian waffle mix *Krusteaz
- 2 eggs
- 1/3 cup oil *Grapeseed oil
- 1 1/3 cup water
- 1 tsp vanilla
Fresh blueberry topping
- 1 cup fresh blueberries
- 1/4 cup slivered almonds
- 1/4 cup maple syrup
- 1/2 tsp powdered sugar
Instructions
- In a mixing bowl, whisk together the waffle mix, eggs, water, oil and vanilla until you have a smooth consistency. Let rest for about 10 minutes.
- Heat waffle iron. (*see recipe notes)
- In a bowl, add fresh blueberries, slivered almonds and the maple syrup. Gently toss until blueberries are coated with the syrup. Set aside.
- Once waffle iron is heated, use a ladle to pour the batter into the quadrants. Take caution not to over-pour as this may cause a mess (per experience!) Close lid and let cook (time varies depending on waffle iron settings/type).
- Carefully remove waffles and let rest on cooling rack for a minute or so.
- Place waffles in a stack (3-4, how ever many you are craving). Spoon blueberry topping, drizzle with maple syrup to your liking and sift powdered sugar on top for a beautiful finish.
- Gobble it up. Or enjoy the deliciousness one bite at a time, whichever you choose!
Notes
*I use Breville (the Smart Waffle Pro) and it is one of the BEST kitchen appliances I own. I love it to pieces and consider it a must-have for waffle enthusiasts like myself. I had to play around with the settings a bit and these are my findings: for this recipe, heat the Breville Smart Wafle Pro at 6 bars and once heated, before pouring in the batter, decrease heat setting to 5 bars (Belgian waffle setting).
